  1. Sauté the Onion (and Optional Meat). Begin by turning your Instant Pot to the “Sauté” function. Add a tablespoon of extra virgin olive oil and allow it to heat briefly. Once shimmering, add your minced yellow onion and sauté for 2-4 minutes, or until the onions become soft and translucent. This step builds the first layer of flavor.

    Want to add Meat?

    If you’re making a heartier sauce, now is the time to add up to 1 pound of ground beef, ground turkey, or Italian sausage. Let the wine simmer for a couple of minutes to allow it to reduce slightly, intensifying its flavor. Then, hit “Cancel” on the Instant Pot to turn off the sauté function.

Add the broth, dried seasonings (oregano, parsley, red pepper flakes, salt, pepper), and the peeled, crushed garlic cloves to the pot. Then, dollop the tomato paste directly on top of the crushed tomatoes. Finally, place the butter and drizzle the honey (or sugar) over the tomato layers. DO NOT STIR! Layering the ingredients in this specific order, with the thinner liquids at the bottom and thicker tomato products on top, is the best way to prevent a burn notice from occurring. The liquid at the bottom helps to regulate the temperature and ensures even cooking under pressure.

    Tomato-based sauces and the Instant Pot can sometimes lead to a burn notice due to the density of the tomatoes at the bottom. To prevent this, ensure you effectively deglaze the pot and, most importantly, layer the ingredients as directed without stirring the tomatoes into the broth until *after* pressure cooking. I cannot stress this enough!

  4. Pressure Cook with Natural Pressure Release. Secure the lid on your Instant Pot, ensuring the vent knob is set to the “Sealing” position. Select the “Manual” or “Pressure Cook” function and set the cooking time to 25 minutes on high pressure. Once the cooking time is complete, do not try to speed up this recipe by doing a quick release of pressure. This will likely result in hot liquid spewing out of your vent knob, creating a mess and potentially diluting the sauce’s flavor. It is best to allow for at least 10-15 minutes of Natural Pressure Release (NPR) before carefully releasing any remaining pressure manually. This gradual release helps to tenderize the ingredients further and allows the flavors to deepen even more.
  5. Stir and Discard. After the pressure has been fully released, carefully remove the lid. The proportions in this recipe are not formulated for safe canning. What If I do get a burn notice?

If you meticulously scraped the bottom of the inner pot after sautéing the onion and layered the ingredients as directed without stirring the tomatoes, this is highly unlikely to occur. However, if you still get a burn notice, don’t panic! Some Instant Pot models are simply more sensitive than others and may throw this notice, but then continue to cook without issue, and the sauce still turns out perfectly. If the cooking process stops, check the bottom for anything stuck, add a little more broth, and try again. Often, it’s just a false alarm.

Can this recipe be doubled or halved?

Yes, you can adjust the yield! If you wish to double this recipe, I would only recommend doing so in a larger 8-quart or 10-quart Instant Pot to ensure there is enough headspace and to prevent overfilling. You can also easily cut the recipe in half, but use only a 3-quart Instant Pot model for the best results, as smaller amounts in larger pots can affect pressure building. The cooking time will remain the same (25 minutes on high pressure) when doubling or halving the recipe, as the time required for the pot to come to pressure simply adjusts based on volume.

  • After the cooking time has elapsed, allow the pressure to release naturally for at least 10 to 15 minutes before manually releasing any remaining pressure. Remove the bay leaf and cloves of garlic, stir well, and use as desired or allow to cool before storing.

Red Wine: Use a dry red wine that is suitable for drinking, such as a merlot or cabernet. If you prefer to avoid alcohol, feel free to replace the wine with an equal amount of additional vegetable or chicken broth.
