Craving the rich, savory flavors of classic beef enchiladas but short on time? This Easy Beef Enchilada Casserole is your new weeknight hero! We’ve taken all the beloved elements—perfectly seasoned ground beef, hearty beans, gooey melted cheese, and a zesty enchilada sauce—and transformed them into a simple, layered bake. By stacking the ingredients instead of rolling individual tortillas, you get all the authentic taste with a fraction of the effort. It’s the perfect solution for a satisfying, family-friendly dinner that’s guaranteed to have everyone asking for seconds.

If the idea of meticulously stuffing and rolling tortillas has ever kept you from making enchiladas at home, this recipe is for you. It’s a game-changer for busy evenings, potlucks, or any time you need a crowd-pleasing meal without the fuss.
Often called Stacked Beef Enchiladas, this dish is built on layers of incredible flavor, much like our popular Chicken Enchilada Casserole. The tortillas soften as they bake, absorbing the delicious sauce and melding with the savory beef and cheese to create a wonderfully tender, cohesive dish. It’s a comforting, hearty meal that truly delivers on all fronts.
Key Ingredients for the Perfect Casserole
This recipe uses simple, accessible ingredients to create a powerhouse of Tex-Mex flavor. Here are a few notes to help you customize it to your family’s preferences.

- Ground Beef: Lean ground beef (85/15 or 90/10) works wonderfully here, as it provides great flavor without excessive grease. You can easily substitute it with ground turkey or ground chicken for a lighter version.
- Beans: We love the texture and flavor of black beans, but pinto beans or even red kidney beans are fantastic alternatives. If your family isn’t fond of beans, you can simply omit them and add a little extra ground beef.
- Enchilada Sauce: The sauce is the soul of this dish! Use your favorite brand of red or green enchilada sauce. Red sauce tends to be earthy and chile-based, while green sauce (salsa verde) is tangier with a tomatillo base. For a truly special touch, try our homemade red enchilada sauce. Always check the spice level (mild, medium, or hot) to suit your taste.
- Diced Green Chiles: A small can of diced green chiles adds a subtle, smoky background flavor without much heat. Opt for mild chiles to keep the dish kid-friendly.
- Tortillas: You have options here! Corn tortillas provide the most authentic enchilada flavor. Flour tortillas are also a great choice, offering a softer, chewier texture that holds up beautifully in the casserole. Use whichever you prefer or have on hand.
- Cheese: A generous amount of cheese is a must! Monterey Jack is a classic choice for its superior melting quality. Sharp cheddar adds a bolder flavor, while a pre-shredded Mexican blend offers convenience and a mix of flavors. For the smoothest, meltiest cheese, we recommend grating a block yourself.
How to Make Beef Enchilada Casserole Step-by-Step
This recipe is as simple as making the filling, layering the ingredients, and baking until golden and bubbly. It’s easy enough for a Taco Tuesday but special enough for a Cinco de Mayo celebration.
Step One: Prepare the Savory Beef Filling
In a large skillet, heat a touch of olive oil over medium-high heat. Add the ground beef and chopped onion, cooking until the beef is browned and crumbled. Stir in the minced garlic and cook for another minute until fragrant. If you used a higher-fat beef, be sure to drain off any excess grease at this stage for the best texture.

Step Two: Combine the Filling Ingredients
To the skillet with the browned beef, add the diced green chiles, drained and rinsed beans, spices, and about a cup of the enchilada sauce. Stir everything together until well combined. Let the mixture simmer for a few minutes. This step is crucial as it allows the flavors to meld together and deepen, creating a rich and cohesive filling.

Step Three: Layer the Casserole
Now for the fun part! Start by spreading a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish. This prevents the first layer of tortillas from sticking. Arrange a single layer of tortillas over the sauce, tearing or cutting them as needed to cover the surface. Then, begin your layers:
- One-third of the beef and bean mixture
- A light drizzle of enchilada sauce (about ¼ cup)
- A generous cup of shredded cheese
Repeat these layers two more times. Finish the casserole with a final layer of tortillas, the remaining enchilada sauce spread evenly over the top, and the last of the shredded cheese.
Pro Tip: Be careful not to use too much sauce in the middle layers. A light coating is all you need to soften the tortillas. Over-saturating them can lead to a soggy casserole. Save the majority of the sauce for the top layer!

Step Four: Bake to Perfection
Cover the baking dish tightly with aluminum foil. This traps steam and helps soften the tortillas beautifully. Bake for 30 minutes. Then, remove the foil and continue baking for another 10-15 minutes. This final step allows the cheese to become perfectly melted, bubbly, and slightly golden brown on top.

Step Five: Rest and Serve
This might be the hardest step, but it’s important! Let the casserole rest on the counter for 5-10 minutes after it comes out of the oven. This allows the layers to set, making it much easier to slice and serve neat portions. It also prevents any “roof-of-the-mouth” incidents with molten cheese!
Serve warm, garnished with your favorite taco toppings. The contrast of the warm, savory casserole with cool, creamy, and crisp toppings takes this dish to the next level. Set up a toppings bar and let everyone customize their own slice!

Storage and Make-Ahead Tips
This casserole is just as delicious the next day, making it perfect for meal prep. This recipe generously serves 8 people. When served with sides like rice or a salad, you can easily stretch it to 10 servings.
- For a Smaller Portion: Simply halve all the ingredients and assemble the casserole in an 8×8-inch baking dish. The baking time will remain approximately the same.
- Storing Leftovers: Store any leftover casserole in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave or cover the entire dish with foil and warm in a 350°F (175°C) oven for about 20 minutes.
- Make-Ahead Instructions: Assemble the casserole completely, but do not bake. Cover it tightly with foil and refrigerate for up to 24 hours. When you’re ready to bake, let it sit on the counter for 20-30 minutes to take the chill off, then bake as directed, adding an extra 5-10 minutes if needed.
- Freezing Instructions: This casserole freezes beautifully! Assemble it in a freezer-safe and oven-safe dish. Cover tightly with a layer of plastic wrap and then a layer of foil. It can be frozen for up to 3 months. To bake, thaw it overnight in the refrigerator, then let it sit at room temperature while the oven preheats. Bake as directed, adding 10-15 extra minutes to ensure it’s heated all the way through.
This Beef Enchilada Casserole is a true kitchen workhorse—it’s incredibly easy, wonderfully filling, and a guaranteed hit with the family. The best part? No time spent rolling tortillas while hungry family members circle the kitchen. We hope you enjoy it!

- 1 (15-ounce) can black beans, drained and rinsed
- 12-18 (6-inch) flour or corn tortillas

To assemble, spread ¼ cup of enchilada sauce on the bottom of the prepared dish. Arrange a layer of tortillas over the sauce, cutting them to fit snugly. Top with ⅓ of the beef mixture, ¼ cup of sauce, and 1 cup of cheese. Repeat these layers twice more.

-
Finish with a final layer of tortillas. Pour the remaining enchilada sauce over the top, spreading it to cover completely. Sprinkle with the remaining cheese.

-
Cover the dish with foil and bake for 30 minutes. Uncover and continue to bake for another 10-15 minutes, until the cheese is melted and bubbly.
-
Remove the casserole from the oven and let it rest for 5-10 minutes before slicing and serving with your favorite toppings.
