  • 2 large limes, zested and juiced
  • 2 tablespoons olive oil

  • 1 teaspoon cumin

  • 1 teaspoon smoked paprika

Instructions

For the Quinoa

  1. Bring 2 cups low-sodium vegetable broth to a rolling boil in a medium saucepan over high heat. Once boiling, stir in the 1 cup dry quinoa and ¼ teaspoon kosher salt. For the Lime Dressing

  1. In a small bowl, whisk 2 tablespoons olive oil, 1 teaspoon minced fresh garlic, 1 teaspoon cumin, ½ teaspoon kosher salt, 1 teaspoon smoked paprika, and the zest and juice of 2 large limes together until well combined.
