Essential Ingredients for Your Lentil Chili

Crafting a truly exceptional lentil chili starts with understanding your ingredients. Here’s a closer look at what makes this recipe sing and why specific choices matter:

All the fresh ingredients for Instant Pot Lentil Chili laid out on a kitchen counter, clearly labeled.
Fresh, quality ingredients are key to a delicious Pressure Cooker Vegan Chili.
  • Lentils: The backbone of our chili! For the best texture and to prevent them from becoming too soft or mushy, it is absolutely crucial to use either dried green or brown lentils. Red and yellow lentils have a tendency to break down quickly, making them unsuitable for chili where a firmer texture is desired. Always remember to rinse your lentils thoroughly under cold water before adding them to the pot to remove any potential dirt or dust.
  • Broth: To maintain the delightful plant-based nature of this chili, opt for a high-quality, low-sodium store-bought or homemade vegetable broth. This ensures your chili remains vegan and flavorful. If you are not strictly adhering to a vegetarian diet, you have the flexibility to substitute with low-sodium chicken stock or beef broth for a different flavor profile.
  • Dry Red Wine: My ultimate secret ingredient for imparting a profound, rich depth of flavor to this chili is a touch of dry red wine, such as Merlot or Cabernet Sauvignon. The acidity and complex notes of the wine beautifully enhance all the other ingredients. However, if you prefer to cook without alcohol, simply swap out the wine for an equal amount of additional vegetable broth.
  • Tomatoes: This recipe leverages a combination of rich tomato sauce and chunky diced tomatoes. The tomato sauce provides a smooth, foundational tomato flavor, while the diced tomatoes contribute a lovely textural contrast and burst of freshness, creating a more dynamic chili.
  • Beans: While you can experiment, I personally find kidney beans to be an excellent choice for lentil chili due to their meaty texture and ability to hold their shape during pressure cooking. They add a satisfying chewiness. That said, feel free to customize and swap them out for pinto beans or black beans if those are your preference or what you have on hand. Always drain and rinse canned beans before use.
  • Seasonings: The carefully selected blend of spices in this lentil chili recipe is designed to mirror my award-winning homemade chili seasoning blend. It offers the perfect harmony of robust flavor without overwhelming your palate with excessive heat or spice. It’s a balanced mix that truly defines the chili’s character.
  • Balsamic Vinegar: While it might seem like an unconventional addition, finishing the lentil chili with a splash of good quality balsamic vinegar is a game-changer. Its subtle tanginess and sweetness act as a flavor enhancer, brightening all the savory notes and bringing a remarkable depth that truly makes every single ingredient pop. Do not skip this step!
  • Olive Oil: Essential for sautéing the aromatics and toasting the spices, it forms the initial flavor base of the chili.
  • Yellow Onion & Garlic: These aromatic powerhouses are fundamental to building a complex flavor foundation. Minced onion and garlic provide a sweet and pungent base that deeply flavors the entire dish.
  • Cayenne Pepper (Optional): For those who enjoy a little extra kick, a touch of cayenne pepper can be added. It’s entirely optional, allowing you to control the spice level according to your taste.

Mastering Instant Pot Lentil Chili: Step-by-Step Guide

Making a delicious, robust lentil chili in your Instant Pot is surprisingly simple, but a few key techniques will ensure perfect results every time. Follow these detailed steps to create a meal your whole family will love. You will find the precise ingredient quantities and comprehensive instructions conveniently located in the recipe card at the bottom of this post.

Step One: Aromatic Sauté and Spice Toasting. Begin by setting your Instant Pot to the “Sauté” function. Add the olive oil and allow it to heat briefly. Once shimmering, add the minced yellow onion. Sauté the onion until it becomes beautifully translucent and tender, which typically takes about 2-3 minutes. This crucial step softens the onion and releases its natural sweetness, forming a foundational layer of flavor. Next, incorporate the minced garlic, chili powder, dried oregano, cumin powder, kosher salt, and the optional cayenne pepper. Continue to sauté for just 30 seconds to a minute, stirring constantly. This brief toasting of the spices activates their essential oils, intensifying their fragrance and ensuring a deeply flavorful chili.

Step Two: Deglaze for Flavor and Safety. After sautéing, it is absolutely vital to deglaze the inner pot. Pour in the dry red wine (or additional vegetable broth if you prefer to avoid alcohol). Use a wooden spoon or spatula to vigorously scrape up any browned bits that may have adhered to the bottom of the pot. This not only incorporates those flavorful caramelized bits into your chili but, more importantly, prevents a “burn notice” error during pressure cooking. Allow the wine to simmer and reduce for 1-2 minutes, letting its rich flavors concentrate. Once deglazed, press “Cancel” to turn off the Sauté function.

Step Three: Strategic Layering of Ingredients to Avoid Burn Notice. For successful pressure cooking and to prevent the dreaded “burn notice,” paying close attention to how you layer your ingredients is paramount. First, add the low-sodium vegetable broth to the inner pot. Then, add the rinsed brown or green lentils and the drained and rinsed kidney beans. Give these ingredients a gentle stir to combine them well with the broth and spices. Now, and this is crucial, pour the tomato sauce and diced tomatoes directly on top of the mixture. DO NOT STIR THE TOMATOES INTO THE REMAINING INGREDIENTS. The thick consistency of tomato products can settle at the bottom and trigger a “burn notice,” so keep them layered on top.

Step Four: Pressure Cooking Perfection and Natural Release. Secure the lid on your Instant Pot, ensuring the venting knob is sealed. Set the cooking time to “High Pressure” for 15 minutes by pressing “Manual” or “Pressure Cook” and using the +/- buttons to adjust the time. Once the cooking cycle is complete, resist the urge to perform a quick release. Instead, allow the pressure to release naturally for at least 15 minutes. This natural pressure release is vital for two reasons: it ensures the lentils and beans maintain their ideal texture without becoming mushy, and it prevents hot chili from spewing out of the vent knob, ensuring safety and minimizing mess. After 15 minutes of natural release, you can carefully turn the venting knob to the “Venting” position to release any remaining pressure, then open the Instant Pot. Do not be alarmed by the initial appearance of the chili; the tomatoes will be sitting on top. Once you give everything a good, thorough stir, the tomatoes will seamlessly incorporate, and the chili will thicken beautifully.

Step Five: The Finishing Touch and Serving. The secret to elevating this from a good lentil chili to the BEST lentil chili lies in its final seasoning. Stir in 1 tablespoon of balsamic vinegar right before serving. This acidic finish brightens the entire flavor profile, enhancing each ingredient and adding an incredible depth that will surprise and delight your taste buds. Give it one last taste and adjust any seasonings if necessary.

Delightful Serving Suggestions for Lentil Chili

This Instant Pot Lentil Chili is so intensely flavorful and satisfying on its own that it truly needs no elaborate adornment. However, to enhance the experience and add extra layers of texture and taste, I highly recommend topping it with a few fresh ingredients. My personal favorites include generously diced avocado for a creamy contrast, tangy pickled red onions for a bright zing, and fresh cilantro for a burst of herbaceous freshness. If you are not adhering to a vegan diet, shredded cheese (cheddar or Monterey Jack work beautifully) and/or a dollop of cooling sour cream or Greek yogurt are also absolutely fabulous options that add richness.

And, of course, no chili night is complete without a classic accompaniment! No one will ever complain if you serve this hearty chili with a side of crispy corn chips for scooping, or a warm, crumbly piece of Homemade Cornbread. For a lighter touch, a simple green salad makes a wonderful side.

Expert Tips & Tricks for Perfect Lentil Chili

  • Preventing Mushy Lentils: The key is natural pressure release. While it takes a little longer, it allows the pressure to drop slowly, preventing the lentils from bursting and becoming overly soft. Stick to brown or green lentils, as red and yellow varieties are naturally softer.
  • Adjusting Spice Levels: The recipe provides a mild to medium spice level. If you love heat, feel free to increase the cayenne pepper to ½ teaspoon or more, or add a pinch of red pepper flakes during the sauté step. For less heat, omit the cayenne entirely.
  • Thickening the Chili: This chili naturally thickens as it cools. If you prefer an even thicker consistency right after cooking, you can remove about 1/2 cup of the chili, mash it slightly with a fork or an immersion blender, and stir it back into the pot. Alternatively, you can continue to simmer on the “Sauté” setting (after removing the lid) for 5-10 minutes until it reaches your desired thickness.
  • Freezing for Later: Lentil chili freezes exceptionally well! Allow it to cool completely before transferring to freezer-safe containers or bags. It can be stored in the freezer for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave, adding a splash of broth if it’s too thick.
  • Making it Smokier: For a delicious smoky flavor, consider adding 1 teaspoon of smoked paprika along with the other spices, or a dash of liquid smoke during the liquid addition step.

Frequently Asked Questions (FAQ)

Q: Can I use pre-cooked lentils?
A: This recipe is developed for dried lentils. If using pre-cooked lentils (canned or pouches), you would likely need to adjust the liquid amount and significantly reduce the pressure cooking time. It’s generally best to stick with dried lentils as specified for the best texture and flavor development in the Instant Pot.

Q: What if I get a “burn notice”?
A: A burn notice usually means something is stuck to the bottom of the pot, often a thick ingredient. This recipe explicitly guides you to deglaze thoroughly in Step 2 and to avoid stirring in the tomatoes in Step 3. If you still encounter a burn notice, immediately turn off the Instant Pot, let it cool slightly, remove the inner pot, and carefully scrape the bottom. Add a bit more liquid if necessary before restarting.

Q: How long does lentil chili last in the refrigerator?
A: Leftover Instant Pot Lentil Chili can be stored in an airtight container in the refrigerator for up to 5 days. Its flavors tend to meld and deepen beautifully overnight, making it even more delicious the next day.

  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 2 teaspoons dried oregano
  • 1 teaspoon cumin powder
  • 1 teaspoon kosher salt
  • ¼ teaspoon cayenne pepper, optional
  • ½ cup dry red wine, or additional broth
  • 3½ cups low-sodium vegetable broth
  • 2 cups brown or green lentils, rinsed
  • 1 (15-oz can) kidney beans, drained and rinsed
  • 30 ounces tomato sauce
  • 15 ounces diced tomatoes
  • 1 tablespoon balsamic vinegar
  • Cilantro and avocado, for serving

Instructions

  1. Turn the Instant Pot to sauté, add in 1 tablespoon olive oil, and let heat briefly. Once the oil is heated, add 1 medium yellow onion (minced) and sauté until translucent and softened, about 2-3 minutes. Once the onion has softened, add in 3 cloves garlic (minced), 2 tablespoons chili powder, 2 teaspoons dried oregano, 1 teaspoon cumin powder, 1 teaspoon kosher salt, and ¼ teaspoon cayenne pepper (optional) and sauté for just 30 seconds to a minute, just to toast the garlic and spices.

  4. Top the mixture with 30 ounces tomato sauce and 15 ounces diced tomatoes. DO NOT STIR.
  5. Place the lid on the inner pot and be sure the venting knob is pointed to sealed. Set the cooking time to HIGH PRESSURE for 15 minutes. Do this by hitting manual or pressure cook and use the +/- buttons to adjust the time.
  6. Once the cooking time has elapsed, allow the pressure to release naturally for at least 15 minutes. Once pressure has been released, open up the Instant Pot. The chili will look thick due to the tomatoes on top of the chili. Don’t be alarmed. Add in 1 tablespoon balsamic vinegar and stir to combine.

Equipment

  • Electric Pressure Cooker (6 or 8 quart)

Notes

Red Wine: Dry red wine, like Merlot or Cabernet, is recommended for this Lentil Chili to add depth. However, feel free to use additional vegetable broth in place of the wine for an alcohol-free version.
Lentils: For the best texture, always use dried green or brown lentils. Avoid yellow or red lentils, as they tend to become too soft during pressure cooking.
Storage: Allow leftover Lentil Chili to cool completely to room temperature before transferring to an airtight container. It will keep fresh in the refrigerator for up to 5 days. For longer storage, freeze in a freezer-safe container for up to 3 months. If the chili appears too thick after refrigeration, simply add a splash of extra vegetable stock or water when reheating to achieve your desired consistency.
