Instructions

  1. Layer 4 large eggs, ⅓ cup cottage cheese, ¼ cup cheese (if using in base), 1 pinch kosher salt, and ¼ teaspoon black pepper, in a blender in that order. Blend on LOW speed until completely smooth. Gently tap the blender on the counter a few times to remove any significant air bubbles, which helps prevent a “bubbly” texture.
  2. Spray your silicone egg molds generously with nonstick cooking spray. Evenly divide ⅓ cup of your chosen fillings between the egg molds. If you prefer plain egg bites, you can skip additions here. Pour the smooth egg mixture on top of the fillings, filling each mold about ¾ full to allow for expansion during cooking. Tightly cover the egg bite mold with aluminum foil to ensure proper steaming.
