This gluten and dairy-free almond cake with berries is made with almond flour and it is a fluffy, light, and very moist cake!

Ingredients

  • 3 large egg yolks at room temperature
  • 6 egg whites at room temperature
  • 2/3 cup natural sweetener + 2 tbsp
  • 1 tsp pure vanilla extract
  • a pinch fine sea salt
  • 2 cups almond flour or almond meal
  • 1 cup mixed berries
  • Sugar-free Dark Chocolate melted for topping (optional)

Instructions

  1. Pre-heat the oven to 350F (175°C).
  2. Grease a 9-inch baking pan with nonstick spray. Then sprinkle two tablespoons of gluten-free all-purpose flour or almond meal flour, tapping to coat evenly.
  3. Set the pan on a piece of waxed or parchment paper and trace around it with a pencil. Cut with kitchen scissors just inside the traced line on the paper. Fit the cut piece of paper into the bottom of the pan.
  4. In a large bowl, whisk together the egg yolks and 2/3 cup of the natural sweetener. Whisk until the yolks become pale in color and slightly thickened, about 1 minute. Add the vanilla extract, and whisk well to combine. Set this mixture aside.
  5. In the bowl of a standard electric mixer fitted with the whisk attachment, beat the egg whites at medium speed for about 1 minute, until foamy. Sprinkle in the remaining 2 tablespoons of sweetener, and continue to beat the egg whites until they are very white, firm, and fluffy, forming stiff peaks when the whisk is lifted. The egg whites are ready when you can turn the bowl upside down and they don’t fall out.
  6. Add half of the whipped egg whites to the egg yolk mixture and gently fold to combine, lightening the yolk mixture.
  7. Add the remaining egg whites over the yolks, along with half of the almond flour.
  8. Gently fold them into the mixture using a spatula, being careful not to deflate the egg whites.
  9. Add the remaining almond flour and continue to fold gently until you have a homogeneous, smooth batter. Overmixing can lead to a dense cake, so work carefully.
  10. Pour the batter into the prepared pan. Smooth the top gently with your spatula.
  11. Bake the cake for about 40 to 45 minutes, or until it is golden brown on top and a toothpick inserted into the center comes out clean. Let the hot cake cool on a wire rack for 5 minutes in the pan. Then, run a thin butter knife along the edges of the cake pan to loosen the cake.
  12. Place a wire rack over the top of the cake and carefully invert the cake and the pan onto the rack. Gently remove the pan, then peel away the parchment paper from the bottom of the cake.
  13. Turn the cake right side up onto the wire rack and allow it to cool completely before decorating or serving.
  14. Once cooled, spread the melted sugar-free dark chocolate over the top (if using) and garnish generously with fresh mixed berries.

  • Always be gentle when folding in the egg whites to maintain their volume and ensure a light, airy cake.
  • It is critical that the bowl and whisk used for egg whites are absolutely free of any grease or egg yolk residue, as even a tiny amount can prevent the whites from whipping up properly.
  • If you prefer, you can substitute almond extract for vanilla extract for a more intense almond flavor.
  • To store: Tightly wrap any leftover cake in plastic wrap or an airtight container and store it in the refrigerator for up to 5 days.
  • To freeze: For longer storage, bake and cool the cake completely, but skip adding the berries and melted chocolate. Tightly wrap the cooled cake in several layers of plastic wrap and then aluminum foil. Freeze for up to 3 months. Thaw in the refrigerator before serving and adding fresh toppings.
