- 2 cups low-sodium chicken broth/stock
- 1 teaspoon kosher salt, to season rice
- ½ teaspoon black pepper, to season rice
- 2 cups long-grain white rice
- 1 cup frozen peas, optional
- ⅓ cup freshly grated Parmesan cheese
- 1 cup grated sharp cheddar cheese, optional
