Instructions

  3. Add all ingredients except the chocolate chips to a blender or a food processor. Process on high speed until the batter is completely smooth and all ingredients are well combined, approximately 3 minutes.
  4. Gently stir in the chocolate chips by hand. Do not overmix.
  5. Evenly distribute the batter into the prepared muffin pan.
  6. Fill each cavity about three-quarters full.
  7. Optionally, sprinkle a few extra chocolate chips over the top of each muffin for an appealing finish.
  8. Bake for 15-20 minutes, or until the tops of your muffins are set and a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for about 10 minutes before carefully removing them to a wire rack to cool completely.
