Ingredients
- 2 tablespoons olive oil
- 2 cups sweet potato, peel on, chopped into ½” pieces
- ½ yellow onion, chopped
- 1 (14-ounce) can black beans
- 4 cups tightly packed kale leaves, chopped
- 9 eggs
- ½ teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- Salt to taste
Instructions
- In a large skillet, heat the olive oil to just above medium heat. Sauté the chopped onion and sweet potato until the sweet potato is tender (al dente) and the onion is softened, which typically takes about 15 minutes. If needed, add a few tablespoons of water periodically to help steam the sweet potato and prevent sticking.
- While the vegetables cook, crack the eggs into a bowl. Add the turmeric, ground cumin, garlic powder, and salt.
