Brown rice, roasted butternut squash are tossed together with kale in white bowl

The genesis of this unexpectedly delicious rice bowl was purely practical. Like many home cooks, I often find myself with a collection of odds and ends in the fridge at the end of the week. On one such occasion, I had a bit of leftover brown rice, some delightful roasted butternut squash, and half a bag of baby kale. The resulting explosion of flavors was genuinely astounding – a perfect harmony of sweet, spicy, and earthy notes that instantly elevated a simple collection of leftovers into a culinary discovery I simply had to share!

The magic lies in the delightful contrast between the naturally sweet, caramelized roasted squash, the zesty kick of the salsa, and the comforting heartiness of the rice. This combination isn’t just tasty; it’s a wonderfully balanced meal that is both incredibly easy to prepare and remarkably healthy. As a plant-based option, it’s suitable for vegans and anyone looking to incorporate more vegetables into their diet. Beyond being a fantastic way to repurpose leftovers, this Butternut Squash Rice Bowl also shines as a superb meal prep candidate, providing wholesome, flavorful lunches throughout the week. The Star Ingredients: Butternut Squash, Kale & Rice

Each component of this Butternut Squash Rice Bowl plays a crucial role in its success, both in flavor and nutrition:

Butternut Squash: Sweet & Earthy Goodness

Butternut squash is more than just a seasonal favorite; it’s a nutritional powerhouse. Rich in Vitamin A (in the form of beta-carotene, which gives it its vibrant orange hue) and Vitamin C, it also provides fiber and potassium. When roasted, its natural sugars caramelize, intensifying its inherent sweetness and creating tender, slightly browned edges that add incredible depth to the bowl. Roasting also brings out a nutty, earthy flavor that pairs beautifully with the other ingredients.

Kale: The Green Powerhouse

Kale is widely celebrated as a superfood, and for good reason. It’s packed with vitamins K, A, and C, as well as essential minerals and antioxidants. In this recipe, baby kale offers a milder flavor and tender texture that wilts just slightly when mixed with the warm rice and squash, contributing a fresh, slightly bitter counterpoint to the sweetness of the squash and the spice of the salsa. If baby kale isn’t available, regular kale can be used, just be sure to chop it finely and massage it briefly with a tiny bit of olive oil to soften it.

Brown Rice: The Hearty Base

Brown rice provides the foundation for this wholesome bowl. As a whole grain, it offers sustained energy, complex carbohydrates, and more fiber compared to white rice, contributing to a feeling of fullness and aiding digestion. Its slightly nutty flavor and chewy texture provide a perfect neutral canvas that allows the bold flavors of the squash and salsa to shine. However, the versatility of this dish allows for other grains like quinoa or even lentils to be used as a base, each adding its unique nutritional profile and texture.

Southwestern Flavors: Salsa & Taco Seasoning

The southwestern seasoning, typically a blend of chili powder, cumin, paprika, and oregano, brings a warm, earthy spice that ties all the ingredients together. Paired with a zesty salsa, it adds a vibrant, tangy, and sometimes spicy kick that truly defines the character of the bowl. You can adjust the heat level by choosing a mild or spicy salsa, or by making your own homemade salsa to control the spice profile.

Customize Your Butternut Squash Rice Bowl: Endless Variations

One of the best aspects of this Butternut Squash Rice Bowl is its incredible flexibility. Feel free to experiment with different ingredients based on what you have on hand or what your taste buds desire. This dish truly invites creativity!

  • Greens Swap: If fresh kale isn’t available, or if you prefer a different leafy green, spinach is an excellent substitute. It will wilt even faster and adds a slightly milder flavor. Other options include Swiss chard or collard greens, finely chopped.
  • Squash Alternatives: No butternut squash? No problem! Sweet potatoes, pumpkin, or even acorn squash can be roasted and used interchangeably. They all offer similar sweet and earthy notes that complement the other ingredients beautifully.
  • Beyond the Bowl: Don’t limit yourself to serving this creation in a bowl!
    • For a portable lunch: Roll the mixture into a whole wheat tortilla for a delicious and hearty vegan burrito. Add some black beans or avocado for extra richness.
    • Light and refreshing: Serve the mixture in large lettuce cups for a low-carb, crisp alternative.
    • Stuffed peppers: Use the rice and squash mixture as a filling for bell peppers, then bake until tender.
  • Salsa Substitutes: If you don’t have salsa, or simply want to try something different, diced tomatoes with green chilies (like Rotel) can provide a similar flavor profile and a gentle heat. For a smoky twist, try a chipotle salsa or a roasted tomato sauce. You could also create a creamy dressing with vegan sour cream or tahini mixed with lime juice and a pinch of chili powder.
  • Grain Versatility: While brown rice is excellent, feel free to use leftover Instant Pot Quinoa for a protein-packed Quinoa Butternut Squash Bowl. You can also use a mix of grains, like brown rice and wild rice, or even incorporate cooked lentils for added fiber and protein. Just be sure to adjust cooking times accordingly if starting from raw grains.
  • Adding Protein (Vegan & Non-Vegan):
    • For Vegans: Stir in a can of rinsed and drained black beans, chickpeas, or kidney beans for an extra protein boost. Crumbled baked tofu or tempeh also makes a fantastic addition.
    • For Non-Vegans: This dish is wonderfully enhanced with a sprinkle of crumbled feta cheese or shredded sharp cheddar cheese, adding a salty, tangy dimension.
  • Extra Toppings: Elevate your bowl with a variety of toppings! Sliced avocado or a dollop of guacamole adds creaminess, fresh cilantro brightens the flavors, a squeeze of lime juice adds zing, and a dash of your favorite hot sauce can provide an extra kick. Toasted pumpkin seeds or cashews can add a delightful crunch.

Vegan Butternut Rice Salad in white bowl

A hearty rice dish made with Kale, butternut squash and southwestern seasonings.

Ingredients

  • 2 cups vegetable broth
  • 1 cup brown rice, quinoa, or lentil (or mix)
  • 2 cups roasted butternut squash
  • 1 cup salsa
  • 1 cup baby kale, chopped
  • 2 teaspoons Homemade Taco Seasoning, or store-bought taco seasoning

Instructions

  1. Combine broth, salsa, and taco seasoning together in a medium saucepan and bring to a boil.
  2. Add in rice or quinoa and lower the heat to a simmer. Cover the pan and cook until the grains are tender, according to package directions. For brown rice, this is typically about 50 minutes.
  3. Once the rice is cooked, remove from heat and fluff gently with a fork. Carefully stir in the roasted squash and fresh kale. Cover the pan again and let rest for 5 minutes to allow the kale to wilt slightly before serving.

To Roast Butternut Squash

  1. Peel and cube 1 medium butternut squash into 1-inch pieces. Toss the cubes with 2 teaspoons of olive oil on a baking sheet.
  2. Roast at 400℉ (200℃) for 40 minutes, or until the squash is browned, caramelized, and fork-tender.

Notes

  • Quick Assembly with Pre-Cooked Ingredients: If you have pre-cooked rice and already roasted squash, you can prepare this dish even faster! Simply combine 2 cups cooked brown rice, 2 cups roasted butternut squash, 1 cup salsa, 1 cup fresh chopped kale, and 1 teaspoon homemade taco seasoning in a microwave-safe bowl. Heat in the microwave for 5-7 minutes, stirring halfway, until thoroughly heated through.
  • Quinoa Preparation: To use quinoa instead of rice, rinse 1 cup of quinoa thoroughly under cold water. Combine the rinsed quinoa, 2 cups of water, and taco seasoning in a saucepan and bring to a rapid boil. Reduce the heat to medium-low, cover, and cook until the quinoa has absorbed all of the water, which usually takes about 15 to 20 minutes.
  • DIY Taco Seasoning Alternative: If you don’t have taco seasoning, you can make your own blend. Use 1 teaspoon chili powder, ¼ teaspoon salt, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, ¼ teaspoon cumin, ⅛ teaspoon oregano, and ¼ teaspoon paprika.
