Key Ingredients for Success
Crafting the perfect eggplant pizza bite starts with choosing quality ingredients. While simple, each component plays a crucial role in the overall flavor and texture of this delightful dish.
Eggplant Selection and Preparation
- Eggplant: Choose a firm, glossy eggplant that feels heavy for its size. Smaller globe eggplants tend to have fewer seeds, which can sometimes be a bit bitter. You’ll need approximately one large eggplant, yielding about 10-12 slices. Aim for slices about 1/4 to 1/2 inch thick for even cooking and a substantial base.
- To Salt or Not to Salt? Traditionally, salting eggplant slices and letting them rest for 30 minutes draws out excess moisture and bitterness. However, for these thin pizza bites, it’s often not necessary unless you have a particularly large or older eggplant that might be more bitter. If you choose to salt, rinse thoroughly and pat dry before proceeding.
The Heart of the Pizza: Tomato Sauce
- Homemade Tomato Sauce: We highly recommend using a homemade tomato sauce. It makes a significant difference in taste, offering a fresher, more vibrant flavor profile without any added sugars or artificial ingredients often found in store-bought varieties. You can use any type of ripe tomatoes, from large beefsteaks to sweet cherry tomatoes.
- Store-Bought Alternatives: If time is of the essence, opt for a high-quality marinara or pizza sauce. Always check the ingredient list for minimal additives, no high-fructose corn syrup, and low sodium content. A good quality jarred sauce can still deliver delicious results.
Cheesy Goodness: Mozzarella
- Fresh Mozzarella: This is our top choice! Freshly sliced mozzarella, whether from a ball of whole milk mozzarella or mozzarella di bufala, melts beautifully, creating a creamy, gooey texture. Mozzarella di bufala, made from water buffalo milk, offers a slightly tangier and richer flavor.
- Shredded Mozzarella: If fresh mozzarella isn’t available, pre-shredded mozzarella will work. For the best melt, consider shredding a block of low-moisture, whole-milk mozzarella yourself, as pre-shredded varieties often contain anti-caking agents that can hinder smooth melting.
Finishing Touches: Herbs and Seasoning
- Fresh Basil & Oregano: These herbs add an aromatic, fresh, and authentic Italian flavor. Chop them finely and sprinkle them on just before the final broil or right after they come out of the oven.
- Olive Oil, Salt, and Pepper: A drizzle of good quality extra virgin olive oil helps the eggplant crisp up and adds flavor, while salt and freshly ground black pepper enhance all the other ingredients.

Step-by-Step Instructions to Make Eggplant Pizza Bites
Follow these simple steps to create perfectly tender and cheesy eggplant pizza bites.
- Preheat your oven to 400°F (200°C). Prepare a large baking sheet by lining it with parchment paper for easy cleanup and to prevent sticking.
- Arrange the evenly sliced eggplant rounds on the prepared baking sheet. Drizzle a tablespoon of olive oil over them, ensuring each slice is lightly coated. Season generously with salt and freshly ground black pepper.
- Bake the eggplant slices in the preheated oven for 7-10 minutes, or until they are tender when pierced with a fork but still hold their shape. The goal is to soften the eggplant without letting it get mushy.

- Carefully remove the baking sheet from the oven. Evenly spread about a tablespoon of your homemade tomato sauce over each par-baked eggplant slice.
- Top each sauced eggplant slice with a slice of fresh mozzarella. If using, sprinkle with chopped fresh basil and oregano now.
- Return the baking sheet to the oven. Change the oven setting to broil (grill) on high. Broil for approximately 3-5 minutes, keeping a close eye on them, until the mozzarella is bubbly, melted, and golden brown at the edges. Broiling quickly gives the cheese a delicious crust.
- Remove from the oven, let cool for a minute or two, and then serve immediately. Enjoy your delicious and healthy Eggplant Pizza Bites!

Tips for Perfect Eggplant Pizza Bites
Achieving restaurant-quality eggplant pizza bites at home is easy with a few insider tips:
- Even Slicing is Key: Ensure your eggplant slices are as uniform as possible. This guarantees even cooking, preventing some slices from being undercooked while others are overdone.
- Don’t Overcook the Eggplant: The initial bake is just to soften the eggplant. You don’t want it to be fully cooked or mushy at this stage, as it will continue to cook when topped and broiled.
- Watch While Broiling: Broilers can be powerful and vary in intensity. Keep a constant watch on your pizza bites during the broiling stage, as cheese can go from perfectly golden to burnt in a matter of seconds.
- Quality Cheese Matters: The type of mozzarella you use significantly impacts the final texture. Fresh mozzarella offers a superior melt and creaminess compared to some pre-shredded options.
- Add More Flavor: Enhance the taste by sprinkling a pinch of garlic powder or Italian seasoning over the eggplant slices before baking, or a dash of red pepper flakes for a subtle kick.

Variations and Customizations
Unleash your creativity and personalize these eggplant pizza bites with your favorite toppings:
- Vegetable Boost: Add finely diced bell peppers, mushrooms, red onions, black olives, or even thinly sliced cherry tomatoes on top of the sauce before the cheese.
- Protein Power: For a heartier meal, add cooked and crumbled sausage, mini pepperoni slices, shredded cooked chicken, or ground turkey. Ensure any meat toppings are pre-cooked.
- Cheese Lovers Unite: While mozzarella is classic, a sprinkle of grated Parmesan cheese or a few crumbles of feta cheese can add another layer of flavor. Provolone is another excellent melting cheese option.
- Spice It Up: A dash of red pepper flakes on the sauce or cheese can give these bites a pleasant heat.
- Pesto Perfection: Replace the tomato sauce with a thin layer of pesto for a different, equally delicious flavor profile.
Serving Suggestions
These versatile bites can be served in many ways:
- Appetizer: Arrange them on a platter for a crowd-pleasing party snack.
- Light Lunch or Dinner: Serve alongside a fresh green salad with a light vinaigrette dressing for a complete and satisfying meal.
- Side Dish: They make an excellent low-carb side to grilled chicken, fish, or a hearty bowl of soup.
Do I Peel Eggplant Before Cooking?
For these Eggplant Pizza Bites, there’s generally no need to peel the eggplant. The skin is entirely edible and provides a lovely color contrast and a bit more structural integrity to the bites. While some larger or older eggplants might have slightly bitter skin, the thin slices used here and the robust flavors of the sauce and cheese will effectively mask any subtle bitterness. Plus, leaving the skin on saves you prep time!
How Do I Store Leftovers?
If you happen to have any leftovers (which is rare!), storing them properly will help maintain their freshness:
- Storage: Allow the eggplant pizza bites to cool completely to room temperature. Transfer them to an airtight container and store them in the refrigerator for up to 3-4 days. It’s best to avoid leaving them uncovered, as eggplant can easily absorb odors from other foods in the fridge.
- Reheating: For the best results, reheat the bites in a preheated oven at 350°F (175°C) for about 5-10 minutes, or until warmed through and the cheese is melted again. This method helps crisp up the eggplant base. You can also enjoy them cold, straight from the fridge, which makes them a fantastic grab-and-go snack or light lunch. Microwaving is an option, but it might make the eggplant a bit softer.
