This delicious Extra-Lean Turkey Chili with Kale recipe is easy to make, and perfect for a chilly day!
Ingredients
- 1 tbsp olive oil
- 1 cup diced onions
- 2 garlic cloves minced
- 3/4 pound extra-lean ground turkey
- 1 cup red bell pepper seeded and chopped
- 1/2 cup diced celery
- 1 cup diced carrots
- 3 cups kale chopped
- 2 tbsp crushed red pepper
- 2 tsp ground cumin
- 1/2 tsp ground coriander
- 1 can 19 oz/ 540 ml diced tomatoes undrained
- 1 can 19 oz/540 ml red kidney beans drained and rinsed
- Salt and ground black pepper to taste
Instructions

In a large skillet or Dutch oven over medium-high heat, add olive oil and sauté the diced onions until they become translucent and fragrant, about 5-7 minutes.

Add the minced garlic and continue to sauté for another minute until you can distinctly smell its aromatic scent. Be careful not to burn the garlic.

Introduce the extra-lean ground turkey to the skillet. Break it apart with a spoon and cook for about 10 minutes, stirring occasionally, until it’s browned and cooked through.

Stir in the chopped red bell pepper, diced celery, and carrots. Mix well to combine all the vegetables with the cooked turkey. Cook for 5 minutes until vegetables begin to soften slightly.
