  • 1 medium yellow onion, diced
  • 3 large carrots, peeled and diced
  • 2 ribs celery, diced
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh thyme leaves
  • ½ cup dry white wine, optional (such as Pinot Grigio or Riesling)
  • 6 cups chicken stock
  • 2 dried bay leaves
  • ½ teaspoon crushed red pepper flakes, optional
  • 1 cup uncooked orzo pasta
  • 1 large lemon, zest and juice

Add in the 1 medium yellow onion (diced), 3 large carrots (sliced), and 2 ribs celery (diced) and sauté until tender, about 3-4 minutes. Stir in 1 tablespoon minced garlic and 1 tablespoon fresh thyme leaves; cook for 1 minute until aromatic.
  3. Stir ½ cup dry white wine, if using, and allow the alcohol to cook off for 1 to 2 minutes, scraping any browned bits from the bottom of the pan. Add 6 cups chicken stock, 2 dried bay leaves, and ½ teaspoon crushed red pepper flakes, and bring the mixture to a boil.
  4. Once boiling, add in the seared chicken and 1 cup uncooked orzo pasta and reduce the heat to a simmer. Cook until the orzo is al dente, about 9-10 minutes.
