Spaghetti squash has long been a cherished vegetable in my kitchen, a versatile gem that effortlessly adapts to various culinary creations. I recall enjoying it simply as a side dish in my childhood, often enhanced with just a touch of butter, salt, and pepper. But over the years, I’ve discovered its true potential as the star of many wholesome meals.

In today’s health-conscious world, where many seek alternatives to traditional carbs, spaghetti squash shines as a fantastic substitute for noodles. Its unique texture, which separates into delightful spaghetti-like strands when cooked, makes it an ideal base for dishes like this comforting casserole. What’s more, incorporating spaghetti squash into your meals is an excellent way to boost your vegetable intake, making it a win-win for everyone at the dinner table, regardless of dietary preferences.

This particular Spaghetti Squash Casserole masterfully combines the delicate strands of spaghetti squash with the robust flavors of spicy Italian sausage and a rich, aromatic marinara sauce. The result is a truly memorable dish that’s not only incredibly tasty but also ticks many boxes for specific dietary needs. It’s naturally gluten-free, low-carb, dairy-free (when made without cheese), and entirely Paleo-friendly. This makes it a go-to recipe for those with allergies, sensitivities, or specific lifestyle choices, ensuring everyone can enjoy a hearty, flavorful meal without compromise.

Ultimately, beyond its impressive health credentials, this casserole is simply a comforting, deeply satisfying, and easy-to-prepare meal. It’s bursting with incredible flavor, thanks to its thoughtfully selected ingredients, and surprisingly simple to assemble with just a few key components. Let’s dive into what makes this casserole so special and how you can bring this wholesome goodness to your own kitchen.

Why Spaghetti Squash is the Perfect Noodle Alternative

Spaghetti squash is a true marvel from the cucurbit family, offering a delightful twist on traditional pasta. When cooked, its flesh naturally separates into delicate, spaghetti-like strands, making it an excellent low-calorie, low-carb alternative to wheat-based noodles. This vegetable is not just a clever substitute; it’s packed with nutritional benefits.

  • Low-Calorie and Low-Carb: A single cup of cooked spaghetti squash contains only about 42 calories and 10 grams of carbohydrates, significantly less than traditional pasta, making it perfect for keto, Paleo, and other low-carb diets.
  • Rich in Nutrients: It’s a good source of vitamins A and C, essential for immune function and vision, as well as several B vitamins, which play a crucial role in energy metabolism.
  • High in Fiber: With a decent fiber content, spaghetti squash aids in digestion, promotes satiety, and helps regulate blood sugar levels.
  • Versatile Flavor Profile: Spaghetti squash has a mild, slightly sweet flavor that readily absorbs the tastes of other ingredients, making it an ideal canvas for bold sauces and seasonings, just like in this Italian casserole.

By choosing spaghetti squash as the base for this casserole, you’re not just cutting carbs; you’re adding a powerhouse of nutrients and a unique, enjoyable texture that complements the rich Italian flavors beautifully.

Unlocking the Flavors: Key Ingredients and Modifications

Every great casserole begins with a foundation of quality ingredients. This spaghetti squash casserole relies on a handful of simple yet potent components that combine to create a symphony of Italian-inspired tastes. Here’s a detailed look at the core ingredients and how you can adapt them to your preferences and dietary needs:

Italian Sausage: The Heart of the Casserole

  • Choice of Sausage: You can use either store-bought ground Italian sausage or prepare your own homemade Italian sausage. Both pork, chicken, and turkey varieties work exceptionally well, each offering a slightly different flavor profile and fat content. Pork Italian sausage provides a richer, more traditional taste, while chicken or turkey options offer a leaner alternative.
  • Dietary Considerations: If you’re following a low-carb, Paleo, or gluten-free lifestyle, it’s crucial to scrutinize the ingredient labels of store-bought sausages. Many brands surprisingly include added gluten, sugars, or artificial fillers. Opt for sausages that explicitly state “no added sugar,” “gluten-free,” and list minimal, recognizable ingredients to ensure compliance with your diet.

Aromatic Base: Garlic and Onion

  • Flavor Enhancers: Can you imagine Italian cooking without the fragrant duo of garlic and onions? These foundational aromatics are indispensable, providing a deep, savory base that elevates the entire casserole. Their gentle sweetness and pungent notes infuse the sausage and sauce with an irresistible depth.
  • Preparation: Freshly minced garlic and finely diced yellow onion are highly recommended to maximize their flavor contribution. They caramelize beautifully with the sausage, releasing their essence into the dish.

Dried Oregano: The Italian Herb Staple

  • Simplicity and Depth: To keep this recipe wonderfully simple yet incredibly flavorful, we rely on dried oregano. The spaghetti sauce already brings a lot of character, and just a touch of dried oregano amplifies those classic Italian notes, making the dish truly pop.
  • Quality Matters: While dried, ensure your oregano is fresh and aromatic for the best results. A high-quality herb can make a noticeable difference.

Spaghetti Sauce: The Unifying Element

  • Options for Sauce: Whether you prefer a rich homemade spaghetti sauce, the convenience of Instant Pot Spaghetti Sauce, or your favorite high-quality jarred sauce, the choice is yours.
  • Paleo-Friendly Tip: For those adhering to a Paleo diet, ensure your homemade sauce is prepared without added sugar. If using a jarred sauce, select one that explicitly states “no added sugar” or “Paleo-friendly” to maintain the integrity of the diet.

Eggs: The Binding Protein

  • Structural Integrity: Eggs play a vital role in this casserole by acting as a natural binding agent. They help hold the spaghetti squash strands and other ingredients together, ensuring each slice of casserole is perfectly cohesive.
  • Nutritional Boost: In addition to their binding properties, eggs also contribute an extra dose of protein, making this casserole even more satisfying and nutrient-dense.

Spaghetti Squash: The Star Ingredient

  • Selection: The success of this casserole hinges on the spaghetti squash. Choose a large, firm squash that is free from any bruises or blemishes. A good indicator of ripeness and quality is its weight; it should feel slightly heavier than it looks.
  • Preparation Versatility: While traditional roasting is effective, you can also use an Instant Pot for quick preparation, as detailed in the instructions.

Cheese (Completely Optional)

  • Flavor Enhancement: If you are not following a dairy-free or Paleo diet, a generous layer of shredded mozzarella and a sprinkle of Parmesan cheese on top of the casserole will add a delightful golden-brown crust and a creamy, tangy depth of flavor that is truly irresistible.
  • Dietary Flexibility: The beauty of this casserole is its adaptability. It remains incredibly delicious and satisfying even without the cheese, catering perfectly to those with dairy sensitivities or strict Paleo adherence.

How to Make Spaghetti Squash Casserole: A Step-by-Step Guide

Creating this delicious spaghetti squash casserole is a straightforward process, broken down into two main parts: preparing the spaghetti squash and assembling the casserole. Follow these easy steps for a perfect, comforting meal.

Step One: Prepare the Spaghetti Squash

The first crucial step is to cook your spaghetti squash until its internal strands are tender and easily separated. While my preferred method for speed and ease is using an Instant Pot for spaghetti squash, traditional roasting also yields excellent results. Choose the method that best suits your kitchen and time constraints.

Roasting Method:

  • Preheat Oven: Begin by preheating your oven to 400°F (205°C).
  • Prepare Squash: Carefully cut the spaghetti squash in half lengthwise. A sharp, sturdy knife is recommended for this task. Once halved, use a spoon to scoop out and discard the seeds and stringy pulp from the center.
  • Roast: Place the squash halves, cut-side down, onto a baking sheet that has been lightly greased with olive oil. Roast in the preheated oven for approximately 35 minutes, or until the squash is tender enough for the strands to be easily scraped out with a fork.
  • Cool and Shred: Once cooked, allow the squash to cool sufficiently to handle. Then, using a fork, scrape the tender strands from the skin and transfer them into a large mixing bowl.

Instant Pot Method (Alternative):

  • Cut spaghetti squash in half, remove seeds.
  • Place squash halves on a trivet inside the Instant Pot with 1.5 cups of cold water.
  • Cook on high pressure for 7 minutes. Allow for a natural pressure release for 5 minutes, then quick release any remaining pressure.
  • Once cool enough, scrape out the strands into a large bowl.

Step Two: Prepare the Casserole Filling and Assemble

While your spaghetti squash is cooking, you can simultaneously prepare the savory meat and sauce mixture that will form the heart of your casserole. This efficient workflow ensures a quicker path to dinner.

  • Brown the Sausage: In a large skillet, heat 1 tablespoon of extra virgin olive oil over medium heat. Add the ground Italian sausage and minced yellow onion. Cook, breaking up the sausage with a spoon, until it is thoroughly browned and cooked through. The onions should be softened and translucent.
  • Add Aromatics: Stir in the minced garlic and dried oregano. Cook for another 1-2 minutes, allowing the fragrant garlic to release its aroma, being careful not to burn it.
  • Drain Excess Grease: Once cooked, carefully drain off any excess grease from the meat mixture. This step is important for a less oily and healthier casserole.
  • Combine Ingredients: Add the browned meat mixture directly to the large bowl containing the prepared spaghetti squash strands. Pour in the whisked eggs and 2 cups of your chosen spaghetti sauce. Season generously with salt and freshly ground black pepper to taste. Mix all ingredients thoroughly until everything is well combined and coated.

  • Transfer to Baking Dish: Transfer the entire spaghetti squash mixture into a greased 8×8 inch baking dish, spreading it evenly.
  • Top with Sauce and Cheese (Optional): Pour the remaining 1 cup of spaghetti sauce over the top of the casserole, spreading it to cover the surface. If you are including cheese, now is the time to sprinkle the shredded mozzarella and Parmesan cheese evenly over the top of the sauce layer.
  • Bake: Reduce your oven temperature to 350°F (175°C). Place the casserole in the oven and bake for approximately 1 hour, or until the top is bubbly, golden brown, and the casserole is heated through and set.
  • Serve Hot: Remove from the oven, let it rest for a few minutes to set further, then dish out and serve this delectable, low-carb Italian feast!

Serving Suggestions and Meal Prep Tips

This Spaghetti Squash Casserole is a complete meal on its own, packed with protein, vegetables, and healthy fats. However, you can enhance the dining experience with a few simple additions:

  • Fresh Green Salad: A crisp, refreshing green salad with a light vinaigrette makes an excellent accompaniment, adding a fresh contrast to the rich casserole.
  • Steamed Vegetables: For an extra boost of nutrients, serve alongside steamed broccoli, green beans, or asparagus.
  • Garlic Bread (Non-Low Carb): If you’re not strictly low-carb, a slice of warm garlic bread can be a delightful addition to sop up any extra sauce.

Meal Prep and Storage:

  • Make Ahead: This casserole is fantastic for meal prepping! You can assemble the entire casserole (without baking) and refrigerate it for up to 2 days. When ready to bake, add an extra 10-15 minutes to the baking time if baking from cold.
  • Leftovers: Leftovers store beautifully in an airtight container in the refrigerator for 3-4 days. They reheat well in the microwave or oven.
  • Freezing: This casserole freezes remarkably well. Once baked and completely cooled, cut into individual portions and freeze in airtight, freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator and reheat until warmed through.

Frequently Asked Questions About Spaghetti Squash Casserole

Here are answers to some common questions about making and enjoying this delicious casserole:

  • Can I use ground beef or turkey instead of Italian sausage? Yes, absolutely! While Italian sausage provides a unique flavor profile, you can easily substitute it with ground beef, ground turkey, or even a plant-based ground meat alternative. Just be sure to season it well with Italian herbs and spices (like oregano, basil, and a pinch of red pepper flakes) if it’s not pre-seasoned.
  • How do I pick a good spaghetti squash? Look for a squash that is firm, heavy for its size, and has no soft spots, bruises, or cracks. The skin should be a uniform pale yellow or ivory color.
  • Is this casserole truly dairy-free and Paleo? Yes, when prepared without the optional cheese, this recipe is dairy-free and adheres to Paleo guidelines. Always double-check your Italian sausage and spaghetti sauce labels for hidden dairy or non-Paleo ingredients like added sugars or gluten.
  • Can I add other vegetables to the casserole? Definitely! Feel free to experiment with additions like chopped bell peppers, mushrooms, or spinach. Sauté them with the onion and sausage to ensure they are tender before mixing into the casserole.
  • What if my spaghetti squash is too watery? If your cooked spaghetti squash seems overly watery, gently press it with a paper towel or drain it in a colander for a few minutes before mixing it with the other ingredients. This helps prevent the casserole from becoming too liquidy.

A delicious, hearty Italian casserole made with Spaghetti Squash that is gluten-free, dairy-free, low carb, and Paleo friendly.

Ingredients

  • 1 large spaghetti squash
  • 1 tablespoon extra virgin olive oil
  • 1 pound Homemade Italian Sausage, or store-bought
  • 1 medium yellow onion, minced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 2 cups spaghetti sauce
  • 3 large eggs
  • 1 cup spaghetti sauce, for topping
  • 2 cups shredded mozzarella cheese, optional

Instructions

Prepare Spaghetti Squash

  1. Preheat oven to 400℉/205℃.
  2. Cut 1 large spaghetti squash in half and scoop out the seeds. Place cut side down on a baking sheet that has been lightly greased with olive oil and roast for 35 minutes. After squash is baked, reduce oven heat to 350℉/175℃.
  3. Once cool enough to handle, remove strands of spaghetti squash and place in large bowl.

Prepare Casserole

  1. While the squash is roasting, heat 1 tablespoon extra virgin olive oil in a large skillet. Add 1 pound Homemade Italian Sausage with 1 medium yellow onion (minced) until the sausage is cooked through. Add in 1 teaspoon dried oregano and 3 cloves garlic (minced) and sauté for 1-2 minutes longer. Remove from heat and drain off excess grease.
  2. Add sausage mixture, 3 large eggs (whisked) and 2 cups spaghetti sauce to the prepared squash and mix to combine.
  3. Transfer mixture to an 8×8 dish and cover with remaining 1 cup spaghetti sauce. If using cheese, sprinkle 2 cups shredded mozzarella cheese evenly over the casserole at this time.
  4. Bake at 350℉/175℃ for 1 hour or until top is bubbly and browned.

Equipment

  • 8×8 baking pan

Notes

  • Sausage: Use ground Italian sausage. Pork, chicken, or turkey all work well in this casserole. Just be sure to read the ingredients in your sausage as some brands have added gluten or sugar.
  • Spaghetti sauce: Be sure to omit sugar from homemade sauce or use no added sugar sauce to keep this Paleo Friendly.
  • Spaghetti squash: In place of roasting the squash, use my method for cooking spaghetti squash in the Instant Pot, by cutting in half, removing the seed, and cooking on high pressure for 7 minutes. Be sure to place your squash on a trivet over 1.5 cups of cold water.
  • Cheese: If you are not dairy-free or following a paleo diet, I suggest adding 1 cup of shredded Mozzarella and ¼ cup Parmesan cheese to the top of this casserole.
