  • 2-3 chipotle chiles in adobo, more/less to adjust heat
  • 1 tablespoon apple cider vinegar
  • 1 small yellow or white onion, coarsely chopped
  • 4 cloves garlic, peeled
  • 2 teaspoons cumin
  • 2 teaspoons kosher salt
  • 1 teaspoon oregano
  • 1 teaspoon ground coriander
  • 1 teaspoon black pepper
  • 1 ½ pounds boneless, skinless chicken thighs , cut into thin strips
  • 1 cup fresh pineapple, cut into bite-sized chunks
  • 1 small lime, for serving
