Dinner Recipes

  • Sunday: Grilled Teriyaki Chicken with Instant Pot Cilantro Lime Rice or Pineapple Rice

Tips for This Week’s Meal Plan

  • On Sunday: The teriyaki chicken recipe serves six. Grill extra breasts if you want larger leftovers to add to Monday’s pasta or noodle salad. Cook a double batch of rice to reserve for Tuesday’s Sofritas.
  • On Monday: Make extra pasta or noodle salad for easy lunches later in the week. Toss in diced leftover teriyaki chicken to make it more substantial.
  • On Tuesday: If Sofritas aren’t preferred, swap in seasoned taco meat and serve with the leftover rice from Sunday.
  • On Thursday: Prepare a large tossed salad and the balsamic vinaigrette so it can serve as a side for both Thursday and Friday dinners.
  • On Friday: If you have leftover pesto chicken, dice it and scatter over the pesto pizza. The pizza is tasty either way.
  • Ingredient Notes:
    • Chicken breasts: Buy in bulk or family packs to save money—you’ll use them on Sunday, Wednesday, and Thursday.
    • Fresh mozzarella: Recommended for pesto chicken and pizza; shredded or block mozzarella you grate yourself will work and can be more economical.
    • Tomatoes: Grape or cherry tomatoes are versatile for salads, the skillet, pesto chicken, and pizza topping.
    • Pesto: Use for the pesto chicken and pizza. Leftover pesto is a great spread for grilled cheese or a quick French bread pizza.
