How To Make Slow Cooker Chicken Chili

Ingredients: The Heart of Your Chili

Crafting an exceptional slow cooker chicken chili begins with selecting quality ingredients. Each component plays a vital role in building the layered flavors and comforting texture of this beloved dish. Here’s a closer look at what you’ll need and why it matters:

  • Chicken breasts — For this recipe, boneless, skinless chicken breasts are my go-to, providing lean protein that shreds beautifully into the chili. If you prefer a richer flavor and slightly more tender texture, boneless, skinless chicken thighs would also work wonderfully. Aim for about 1.5 pounds of chicken to ensure a hearty chili.
  • Onion — A generous cup and a half of chopped white onion forms the aromatic base of this chili, contributing a subtle sweetness and depth. Yellow onion is a perfectly acceptable substitute if that’s what you have available.
  • Bell pepper — Diced yellow or orange bell pepper not only adds a vibrant pop of color but also brings a sweet, mild flavor that complements the other ingredients. Green bell pepper can also be used for a slightly more robust, less sweet profile.
  • Corn — Canned corn, drained and rinsed, is a convenient option that adds a touch of sweetness and texture. Alternatively, a package of frozen corn works just as well; simply add it directly to the slow cooker without thawing.
  • Beans — Black beans, thoroughly drained and rinsed, are essential for that classic chili heartiness and earthy flavor. Feel free to experiment with other varieties like pinto or kidney beans, which would be equally delicious additions.
  • Salsa — This ingredient is a secret weapon for simplifying the recipe while boosting flavor. A jar of your favorite salsa provides a pre-made blend of tomatoes, onions, peppers, and spices. Choose a mild, medium, or hot salsa to easily adjust the heat level of your chili to your preference.
  • Chicken broth — Chicken broth provides the liquid base for the chili, infusing it with savory notes. Opt for your preferred brand, and if you’re mindful of sodium intake, a low-sodium chicken broth is an excellent choice.
  • Tomato paste — Don’t underestimate the power of tomato paste! Just a few tablespoons add a concentrated, rich, and robust tomato flavor that deepens the overall complexity of the chili.
  • Diced tomato — Canned diced tomatoes contribute chunkiness and fresh tomato flavor. Be sure to drain them well before adding to prevent the chili from becoming too watery.
  • Crushed tomato — Complementing the diced tomatoes, crushed tomatoes create a smoother, more savory tomato foundation, adding another layer of rich flavor to the chili.
  • Garlic — Freshly minced garlic is always preferred for its pungent aroma and flavor. However, to save time, a jar of pre-minced garlic is a convenient alternative.
  • Seasonings — A balanced blend of salt, freshly ground black pepper, earthy cumin, and aromatic coriander brings all the flavors together. These spices are key to achieving that signature chili taste.
  • Toppings — No chili is complete without toppings! Fresh cilantro adds a bright, herbaceous note, while shredded mozzarella cheese (or your favorite cheese blend) provides a creamy, melty finish.

Instructions: Simplicity in Every Step

The beauty of slow cooker cooking lies in its straightforward process. Follow these simple steps to bring your delicious chicken chili to life:

Step 1: Combine All Ingredients

  • Begin by adding all of your prepared ingredients—chicken breasts, chopped onion, bell pepper, corn, black beans, salsa, chicken broth, tomato paste, diced tomatoes, crushed tomatoes, minced garlic, salt, pepper, cumin, and coriander—directly into your slow cooker. There’s no need to sauté or pre-cook anything; the slow cooker will handle all the heavy lifting.
  • Once all ingredients are in, stir them thoroughly to ensure everything is well combined and the spices are evenly distributed. This ensures every bite of your chili will be bursting with flavor.
  • Securely cover your slow cooker with its lid.
  • Cook on low for 6 to 7 hours for a gradual, deep flavor development, or if you’re short on time, cook on high for 3 hours. The chicken will become incredibly tender, practically falling apart.

Step 2: Shred the Chicken

  • Once the cooking time is complete, carefully remove the tender chicken breasts from the slow cooker. They should be very easy to handle.
  • Using two forks, shred the chicken into bite-sized pieces. The chicken will be so tender that it will practically shred itself.
  • Return the shredded chicken to the slow cooker and stir it back into the chili mixture. This allows the chicken to absorb more of the chili’s rich flavors.
  • At this point, taste the chili and adjust the seasonings as needed. You might want to add a pinch more salt, a dash of pepper, or even a bit more cumin or a touch of chili powder if you desire extra warmth.
  • Cover the slow cooker again and allow it to cook for an additional 10 to 15 minutes. This brief simmering period helps the shredded chicken fully integrate with the chili and ensures all the flavors meld together beautifully.

Step 3: Garnish and Serve

  • Ladle your warm, inviting chicken chili into bowls.
  • Generously top each serving with fresh cilantro and a sprinkle of shredded mozzarella cheese, or any other toppings you desire. The fresh herbs add brightness, and the melted cheese offers a creamy finish.
  • Serve immediately and savor every comforting spoonful of your homemade slow cooker chicken chili!

Recipe Tips for Perfect Slow Cooker Chicken Chili

To ensure your slow cooker chicken chili turns out perfectly every time, keep these expert tips in mind:

  • Spice It Up (or Down!): My recipe uses a medium-spicy salsa, which provides a good base level of heat. If you’re a fan of fiery flavors, don’t hesitate to add extra chili powder, a pinch of cayenne pepper, or diced fresh jalapeños (with or without seeds, depending on your preferred intensity) at the beginning of the cooking process. For a milder chili, choose a mild salsa and consider adding a touch of sweet paprika or dried oregano. Bay leaves can also add a subtle, herbaceous depth.
  • Resist the Urge to Peek: One of the golden rules of slow cooking is to keep the lid on! Every time you lift the lid, a significant amount of heat escapes, prolonging the cooking time by at least 20-30 minutes. Let your slow cooker do its job uninterrupted to maintain a consistent cooking temperature and achieve optimal results.
  • Mind Your Salt Intake: If you’re monitoring your sodium levels, feel free to use a low-sodium chicken broth. You can always adjust the salt content at the end of the cooking process by adding a small amount to taste. Another fantastic option for controlling sodium is to use my easy homemade vegetable broth, giving you complete control over the ingredients.
  • Chicken Choices: While chicken breasts are great for a leaner chili, boneless, skinless chicken thighs are also an excellent choice. They tend to be more forgiving and retain moisture incredibly well, resulting in an even more tender and flavorful chili. Use whichever you prefer or have on hand!
  • Preventing Watery Chili: Ensure you drain canned ingredients like corn and diced tomatoes thoroughly. While the slow cooker is designed to retain moisture, excessive liquid can dilute the flavors. The ratio of ingredients in this recipe is balanced to create a thick, hearty chili.

How To Store Leftovers

One of the many benefits of this slow cooker chicken chili is how perfectly it stores, making it ideal for convenient meals throughout the week or even for future meal planning.

  • To Store in the Refrigerator: Allow any leftover chili to cool completely to room temperature before storing. Transfer it to an airtight container and place it in the refrigerator. Your delicious chili will remain fresh and flavorful for up to 4 days, ready for quick lunches or dinners.
  • To Freeze for Longer Storage: Chili freezes exceptionally well, making it perfect for batch cooking and meal prep. Once cooled, spoon the leftovers into freezer-safe containers or heavy-duty freezer bags. Lay freezer bags flat to save space. It will keep beautifully in the freezer for up to 3 months. Don’t forget to label containers with the date!
  • To Reheat: When you’re ready to enjoy your stored chili, thaw frozen chili overnight in the refrigerator. Then, reheat it gently in the microwave or on the stovetop over medium-low heat until it is heated through, stirring occasionally. If the chili appears a bit too thick after refrigeration or thawing, you can add a splash of water or extra chicken broth to achieve your desired consistency.

What To Serve With Slow Cooker Chicken Chili

Enhancing your slow cooker chicken chili experience is all about choosing the right accompaniments. From classic pairings to unexpected delights, here are some fantastic ideas to serve alongside your hearty chili:

  • Buttery Cornbread: A match made in heaven! The sweet, crumbly texture of cornbread is a classic companion to savory chili. Try this slow cooker chicken chili with my light and fluffy gluten-free cornbread for a truly comforting meal. Warm cornbread is perfect for soaking up every last drop of that flavorful sauce.
  • Crunchy Tortilla Chips: Whether you enjoy them as a crispy side for dipping or crumbled on top of your chili for added texture and flavor, tortilla chips are a fantastic choice. For a healthier twist, my spicy kale chips would also make a great, savory side dish. A squeeze of fresh lime juice over your chili before serving adds a zesty brightness that complements the chips beautifully.
  • A Fresh Side Salad: To balance the richness of the chili, a crisp, fresh salad is an excellent choice. The cool, refreshing greens provide a lovely contrast. My chopped red cabbage kale salad or a vibrant Autumn beet orange salad would both be wonderful, light complements to this cozy fall meal.
  • Savory Rice: Serving slow cooker chicken chili over a bed of fluffy, savory rice transforms it into an even more substantial and satisfying meal. For perfectly cooked rice every time, follow my guide on How to Make Fluffy Rice. If you’re looking for a delicious low-carb option, my garlic parmesan cauliflower rice is an incredible alternative.
  • Baked Potatoes or Sweet Potatoes: For a hearty and filling option, serve your chili spooned over baked potatoes or sweet potatoes. The soft interior of the potato soaks up the chili wonderfully.
  • Quesadillas or Tacos: Use the chili as a delicious filling for quesadillas or tacos. It’s a creative way to repurpose leftovers and enjoy a different meal experience.

Recipe Variations & Customization Ideas

This slow cooker chicken chili recipe is incredibly versatile, making it easy to adapt to your taste preferences, dietary needs, or whatever ingredients you have on hand. Don’t be afraid to get creative and make it your own!

  • Spices: The beauty of chili is its endless spice possibilities. If you’re a heat seeker, amp up the flavor with a dash of chipotle powder for a smoky kick, a pinch of cayenne pepper for pure fire, or diced fresh jalapeños or serrano peppers. For a milder but equally flavorful chili, consider adding sweet paprika, dried oregano, a touch of smoked paprika, or even a bay leaf for a subtle aromatic touch.
  • Chicken: While boneless, skinless chicken breasts are specified, feel free to substitute them with an equal amount of boneless, skinless chicken thighs for a richer, more succulent result. Both options yield incredibly tender chicken in the slow cooker.
  • Veggies: This slow cooker chicken chili is an excellent canvas for sneaking in extra vegetables. Beyond the existing tomatoes, corn, and bell pepper, consider adding finely diced carrots, zucchini, or even a handful of fresh spinach or kale during the last hour of cooking. You could also incorporate other legumes like chickpeas or cannellini beans for added fiber and texture. For inspiration, check out my extra lean turkey chili with kale or Whole30 pumpkin chili!
  • Toppings: This is where you can truly personalize your chili! While fresh cilantro and shredded mozzarella are classic, the possibilities are endless. Experiment with sliced avocado for creamy richness, crunchy tortilla strips for texture, a dollop of sour cream or Greek yogurt for tanginess, chopped green onions for a mild onion flavor, or even a squeeze of fresh lime juice for brightness. A blend of cheddar and Monterey Jack cheese is also a popular choice.
  • Salsa: The jar of salsa is a fantastic shortcut, providing a complex flavor base. Don’t limit yourself to one kind! Switch up your slow cooker chicken chili by using a different type of salsa. A vibrant salsa verde will give it a tangy, tomatillo-based flavor, while a smoky chipotle salsa will infuse it with deep, roasted notes. You can also opt for homemade salsa if you have time.
  • Protein Alternatives: If you’re not in the mood for chicken, this recipe adapts well to other proteins. Ground turkey or beef can be browned before adding to the slow cooker (or even added raw to some slow cooker models, though browning adds flavor). For a vegetarian or vegan option, omit the chicken and add extra beans and vegetables, perhaps a plant-based ground crumble.

Slow Cooker Chicken Chili is comforting, flavorful, and one of the easiest recipes you’ll ever make! Simply add all of your ingredients together and let the slow cooker do the rest.

Ingredients

  • 2 large skinless boneless chicken breasts (about 1 and 1/2 pounds)
  • 1 ½ cup white onions, chopped
  • 1 cup yellow bell pepper, diced
  • 1 (11 ounce) can corn (rinsed and drained) or 1 package of frozen corn
  • 1 (19 ounce) can black beans, drained and rinsed
  • 1 (21 ounce) bottle salsa sauce, medium (adjust heat to preference)
  • 2 cups chicken broth (low sodium if desired)
  • 3 tablespoons tomato paste
  • 2 cups diced tomato, drained
  • 1 cup crushed tomato
  • 1 tablespoon minced garlic
  • 1 teaspoon salt (or to taste)
  • Freshly ground black pepper (to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander

Topping:

  • ½ cup mozzarella cheese, shredded
  • 1 tablespoon chopped cilantro, fresh
  • Optional: sour cream, avocado, lime wedges, tortilla strips

Instructions

  1. Add all the ingredients (chicken, onions, bell pepper, corn, black beans, salsa, chicken broth, tomato paste, diced tomato, crushed tomato, minced garlic, salt, pepper, cumin, and coriander) to a slow cooker.
  2. Stir well to combine all ingredients thoroughly.
  3. Cover with the lid and cook on low for 6-7 hours or on high for 3 hours.
  4. Once cooked, carefully remove the chicken from the slow cooker. Shred it into small pieces using two forks.
  5. Return the shredded chicken to the slow cooker and stir it back into the chili mixture.
  6. Taste the chili and adjust seasonings as necessary, adding more salt, pepper, or other spices to your preference.
  7. Cover the slow cooker again and cook for an additional 10-15 minutes to allow the shredded chicken to fully meld with the flavors.
  8. Serve warm, topped generously with fresh cilantro and shredded cheese.
  9. Store any leftovers in an airtight container in the refrigerator for up to 4 days.
  10. Reheat leftovers in the microwave or on the stovetop until heated through. If too thick, add a splash of water or broth.

Notes

  • Avoid opening the slow cooker lid during cooking unless absolutely necessary. Each time the lid is lifted, significant heat escapes, which extends the overall cooking time.
  • For reduced sodium, use a low-sodium chicken broth.
  • Boneless, skinless chicken thighs can be used as an alternative to chicken breasts for a richer flavor and more tender texture.
  • Feel free to add chili powder or red pepper flakes for extra heat if you prefer spicy foods.
