Ingredients

For the Cauliflower

  • 1 large head cauliflower, cut up into florets
  • 2 tablespoon olive oil
  • 2 cloves crushed garlic
  • Salt and pepper to taste

For the filling

  • ½ tablespoon olive oil
  • ½ onion, chopped
  • 3 carrots, chopped
  • ¼ teaspoon pepper
  • 3 cloves garlic, finely chopped
  • 1 lb ground turkey
  • 1 cup tomato sauce
  • ¼ cup tomato paste
  • 1/2 cup chicken broth
  • ½ cup peas (frozen or fresh)
  • 1/2 cup canned corn, drained
  • 1 teaspoon thyme (dried)
  • Salt to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring water to a rolling boil. Add the cauliflower florets and cook until they are fork-tender, typically about 8-10 minutes. Drain the cooked cauliflower thoroughly in a colander, ensuring all excess water is removed.
  3. Transfer the drained cauliflower to a food processor or use an immersion blender. Add 1 tablespoon of olive oil and the 2 crushed garlic cloves. Blend until the mixture is smooth and creamy, scraping down the sides as needed. Season the mashed cauliflower generously with salt and pepper to taste, then set aside.
