The Mexican Street Corn Salad You’ll Crave All Season

Among the many corn recipes I’ve shared, this particular Mexican Street Corn Salad stands out as truly exceptional. If there’s one recipe I could implore you to try immediately, it would undoubtedly be this one. It’s not just another corn salad; it’s an experience.
Inspired by the classic Mexican street food favorites, *elotes* (grilled corn on the cob) and *esquites* (corn kernels served in a cup), I’ve crafted a version that is both fresh and lighter, without compromising on the authentic, vibrant flavors. Traditional *elotes* often feature corn heavily coated in mayonnaise, but my rendition offers a bright and creamy alternative.
My secret lies in a delightful dressing made with a harmonious blend of fresh lime juice, wholesome Greek yogurt, and a touch of sour cream. This combination yields a dressing that is incredibly creamy, yet wonderfully light and bright, allowing the natural sweetness of the corn to shine through. Finished with generous chunks of ripe avocado and savory cotija cheese, this corn salad is so utterly delicious, you might find it hard to share. Prepare to fall in love with this Esquites recipe!
Happy Cooking! xo Kristen
Essential Ingredients for the Perfect Street Corn Salad

Creating an exceptional Mexican Street Corn Salad begins with selecting the right ingredients. Here’s a detailed guide to ensure your salad is packed with flavor and freshness:
- Corn: The Star of the Show: While this recipe includes modifications for using frozen corn, nothing quite compares to the flavor and texture of fresh corn on the cob when it’s in season. Look for plump, firm ears with bright green husks. White, yellow, or bi-color corn varieties are all equally delicious and will provide a sweet, tender base for your street corn salad. Grilling fresh corn adds an unparalleled smoky depth that truly elevates this dish.
- For the Lightened-Up Dressing: Our dressing is the heart of this Esquites recipe, balancing creaminess with zesty brightness. It’s made with plain Greek yogurt for a healthy protein boost, rich sour cream for traditional creaminess, vibrant lime zest and fresh lime juice for that essential tang, a dash of hot sauce for a subtle kick, and smoked paprika and chili powder for warmth and a hint of smokiness. This combination ensures a dressing that’s intensely flavorful yet remarkably light. If you prefer a more classic, indulgent profile, feel free to substitute the Greek yogurt with mayonnaise.
- Onion: Green is the Way to Go: Thinly sliced green onions are the ideal choice for this Mexican Street Corn Salad. Their mild, fresh flavor complements the corn beautifully without overpowering it. Unlike sharper yellow, white, or red onions, green onions provide a delicate aromatic touch that enhances the overall balance of the salad.
- Jalapeño: The Perfect Hint of Heat: A small, finely minced jalapeño pepper, with its seeds and ribs removed, introduces just the right amount of vibrant kick to the street corn. The goal is to add flavor and a gentle warmth, not overwhelming spice. You can easily adjust the quantity based on your personal preference for heat; for more spice, include some seeds or a larger pepper.
- Cilantro: Freshness & Aroma: Cilantro is a quintessential herb in Mexican cuisine, lending a distinctive fresh, citrusy aroma and flavor to this dish. We understand it’s an ingredient that divides opinions—some adore it, while others find its taste soapy. If you’re in the latter camp, simply omit it or substitute with fresh parsley or chives for a different, but still pleasant, herbal note.
- Avocado: Creamy Indulgence (Optional but Recommended): Adding diced avocado is entirely optional, but highly recommended for its luxurious, creamy texture and healthy fats. It brings another layer of richness that complements the sweet corn and tangy dressing beautifully. Choose a ripe, but firm, Hass avocado. If avocados are out of season, too expensive, or you simply prefer to omit them, the salad will still be fantastic.
- Cotija Cheese: The Salty Finish: Cotija cheese is a firm, salty, and slightly tangy Mexican cow’s milk cheese that crumbles easily, making it perfect for sprinkling over this street corn salad. It provides a delightful salty contrast to the sweet and creamy elements. Excellent substitutes include crumbled queso fresco for a milder flavor, or even feta cheese for a similar salty, crumbly texture.
How to Make Mexican Street Corn Salad: A Step-by-Step Guide
Creating this irresistible Mexican Street Corn Salad is surprisingly simple. Follow these steps for perfect results every time. You will find the exact ingredient quantities and detailed instructions in the comprehensive recipe card at the bottom of this post.
- Grill Corn for Smoky Flavor. Begin by preparing your fresh corn. Husk the ears and carefully remove all silks. Brush each cob lightly with extra virgin olive oil and season generously with salt and pepper. Preheat your grill (gas, charcoal, or even a grill pan) to medium-high heat. Place the seasoned corn on the hot grill, turning occasionally to ensure even cooking. Grill for 8-10 minutes, or until the kernels are tender, slightly softened, and have developed beautiful, slightly charred spots, which impart a wonderful smoky depth to the salad. Once grilled, remove the corn from the heat and allow it to cool slightly, making it easier to handle.

- Prepare the Creamy & Zesty Dressing. While your grilled corn is cooling, it’s the perfect time to whisk together the vibrant dressing. In a large mixing bowl, combine the plain Greek yogurt, sour cream, the zest of one medium lime, fresh lime juice, hot sauce, smoked paprika, chili powder, and kosher salt. Ensure you zest the lime *before* cutting it in half to extract the juice, as it’s much easier. Whisk all these ingredients thoroughly until the dressing is smooth, creamy, and well-combined. This ensures every bite of your Mexican Street Corn Salad is coated with deliciousness.

- Cut Corn Off the Cob. Once the grilled corn is cool enough to handle safely, carefully cut the kernels off the cob. Stand each ear upright in the center of a bundt pan (the hole in the middle provides stability). Using a sharp knife, slice downwards, allowing the kernels to fall neatly into the pan. This method makes the process incredibly easy and mess-free. Alternatively, you can place the cob flat on a cutting board, slice one side flat, then stand it up and cut the remaining kernels. Add the fresh corn kernels to the bowl with the prepared dressing.
Easiest Way to Cut Corn off the Cob
For a quick and clean way to remove corn kernels, use a bundt pan! Simply stand the corn cob in the center hole of the bundt pan. As you use a sharp knife to carefully slice the kernels off the cob, they will conveniently fall right into the pan, minimizing mess and maximizing efficiency.
- Combine All Salad Components. To the bowl containing the corn kernels and dressing, add the thinly sliced green onions, diced avocado (if using), finely minced deseeded jalapeño, freshly chopped cilantro, and crumbled cotija cheese. Gently stir all the ingredients together with a spatula or large spoon until everything is thoroughly combined and coated with the creamy dressing. Be careful not to mash the avocado.
- Serve and Enjoy! Transfer your freshly made Mexican Street Corn Salad to a beautiful serving dish. For an extra touch of freshness and flavor, garnish with additional minced cilantro, a sprinkle of crumbled cotija cheese, and a drizzle of hot sauce if you desire more heat. This versatile dish is ready to be dug into with a fork, spoon, or even your favorite tortilla chips. It tastes amazing immediately, but also benefits from a brief chill in the refrigerator to allow the flavors to meld.

How to Make Mexican Street Corn Salad with Frozen Corn Kernels
Don’t let corn being out of season stop you from enjoying this fantastic Mexican Street Corn Salad! You can absolutely achieve delicious results using high-quality frozen corn kernels. To prepare frozen corn for this recipe, simply toss 3 cups of defrosted corn kernels with 2 teaspoons of olive oil on a baking sheet. Spread them in a single layer and roast in a preheated oven at 400℉ (200℃) for about 15 minutes, or until the kernels are tender and lightly golden brown, with a few charred edges. This roasting step develops a lovely sweetness and depth of flavor, mimicking the grilled effect. Allow the roasted corn to cool slightly before incorporating it into the salad dressing and other ingredients, just as you would with fresh grilled corn.

Ingredients
- 3 ears corn on the cob, husked and silks removed
- salt and pepper, to season corn
- ½ tablespoon extra virgin olive oil
- 2 tablespoons plain Greek yogurt, or mayonnaise
- 2 tablespoons sour cream
- 1 medium lime, zest and juice
- 1 teaspoon hot sauce, + more for serving
- ½ teaspoon smoked paprika, or regular paprika
- ½ teaspoon chili powder
- ½ teaspoon kosher salt, for dressing
- 3 green onions, thinly sliced
- ½ small jalapeño, deseeded, ribs removed, and finely diced
- 1 medium ripe Hass avocado, peeled and cubed (optional)
- ¼ cup minced cilantro, + more for serving
- ¼ cup crumbled cotija cheese, + more for serving
Instructions
-
Preheat a gas, charcoal or electric grill to medium-high heat. While the grill is heating, brush the husked corn on the cob with a bit of oil and season with salt and pepper. Grill, turning occasionally for 8-10 minutes, until the corn is tender and slightly charred. Remove from the grill and let cool.
-
While the corn is cooling, prepare the dressing by whisking together 2 tablespoons plain Greek yogurt, 2 tablespoons sour cream, the zest and juice of 1 medium lime, 1 teaspoon hot sauce, ½ teaspoon smoked paprika, ½ teaspoon chili powder, and ½ teaspoon kosher salt together.
-
Carefully cut the corn off the kernels. I like to do this using a bundt pan to hold the corn cob steady and catch the kernels. Add kernels to prepared dressing.
-
Add the sliced green onions, cubed avocado, minced cilantro, and cotija cheese and gently stir to combine.
-
Transfer to a serving dish and top with additional minced cilantro, crumbled cheese, and hot sauce and serve as desired.
Notes
Substitute for Cotija Cheese: Feel free to use queso fresco or crumbled feta.
Jalapeño: Adjust as desired to control the spice level.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. The avocado may brown slightly, but is still fine to eat.
