Unlocking Guilt-Free Pasta: Discovering nuPasta
For many, embarking on a low-carb diet often means saying goodbye to beloved pasta dishes. The thought of giving up comforting bowls of spaghetti or fettuccine can be a significant hurdle. But what if there was a way to enjoy delicious pasta without compromising your dietary goals? Get ready to be pleasantly surprised by nuPasta, a revolutionary low-carb, high-fiber, and gluten-free alternative that is changing the game for healthy eating enthusiasts.
When I first encountered this innovative pasta, its claims of being low-calorie, high-fiber, and gluten-free while maintaining a pasta-like experience seemed almost too good to be true. My skepticism quickly turned into excitement as I delved into the science behind it. The secret lies in its unique composition, crafted from the root of the konjac plant. Unlike traditional wheat-based pasta, konjac contains no starch, making it incredibly low in carbohydrates and calories. In fact, a single package of nuPasta boasts a mere 25 calories and an impressive 6 grams of dietary fiber – truly a nutritional powerhouse!

nuPasta isn’t just a single product; it’s a versatile line of pasta alternatives designed to fit various culinary needs. You can find it in popular shapes like spaghetti, fettuccine, and angel hair, allowing you to recreate many of your favorite recipes with a healthy twist. Its growing popularity means it’s now widely available, stocked in the pasta or health food aisles of over 500 stores across Canada, making it accessible to a broad audience eager for nutritious options.
The Convenience Factor: Quick & Easy Meal Prep
One of the most appealing aspects of nuPasta is its incredible convenience. It comes pre-cooked, drastically cutting down on preparation time – a dream come true for busy weeknights! The process is remarkably simple: just open the package, drain the liquid, and give it a quick rinse under cold water for about 10 seconds. After this brief preparation, the nuPasta is ready to be incorporated into your sauce, where it will absorb all the delicious flavors as it heats through.
Its neutral taste and tender yet satisfying texture make nuPasta an excellent canvas for a wide array of sauces. Whether you prefer a creamy Alfredo, a vibrant tomato sauce, a classic basil pesto, a rich four-cheese blend, or my personal favorite – a bold sun-dried tomato pesto – nuPasta adapts beautifully, ensuring a flavorful and enjoyable meal every time. This adaptability makes it a staple for anyone looking to maintain a healthy lifestyle without sacrificing variety or taste.

Crafting the Perfect Sun-Dried Tomato Pesto
Let’s talk about the star of the show: this incredible sun-dried tomato pesto. Its rich, tangy, and deeply savory notes captivated my family and me for days. My husband couldn’t get enough, and even my notoriously picky son enjoyed it immensely – a true testament to its irresistible flavor! The best part? It’s incredibly easy to prepare. Simply toss all the ingredients into a food processor and blend for a minute or two until you achieve a smooth, vibrant pesto. The aroma alone will make your mouth water!
While traditional pesto often calls for pine nuts, I’ve opted to omit them in this particular recipe. The sun-dried tomatoes naturally lend a wonderful thickness and hearty texture to the pesto, making additional nuts unnecessary. If you prefer a slightly thinner consistency, a quarter cup of water can be added during processing to achieve your desired pourability without sacrificing flavor. This pesto is not only fantastic with pasta but also incredibly versatile. I’ve been incorporating it into various dishes lately, from my popular Sun-Dried Tomato, Spinach, and Cheese Stuffed Chicken to a refreshing Sun-Dried Tomato Pesto Cauliflower Salad, and a quick Sun-Dried Tomato Pesto Shrimp Asparagus Skillet. This pasta dish offers a delightful change of pace, showcasing the pesto’s incredible depth.
Bringing It All Together: Italian Sausage & NuPasta
To transform this pesto pasta into a complete and satisfying meal, I’ve incorporated fresh Italian sausage, adding a robust protein element. The process is straightforward: simply slice the sausages and sauté them in a non-stick skillet with a touch of olive oil. In less than 7 minutes, they’ll be perfectly cooked through and beautifully browned, releasing their aromatic juices into the pan.
The beauty of this recipe lies in its one-pan simplicity. Once the sausage is cooked, the pre-prepared nuPasta is added directly to the same skillet, allowing it to soak up all the savory drippings and flavor. Generous dollops of the homemade sun-dried tomato pesto are then stirred in, coating every strand of pasta and every piece of sausage in its rich, crimson hue. A thorough mix ensures all the components are beautifully combined and warmed through in just about a minute. To finish, a sprinkle of fresh parsley and a generous grating of Parmesan cheese elevate the dish, adding freshness and an extra layer of savory indulgence.

If you find yourself with extra sun-dried tomato pesto (which is always a good problem to have!), don’t hesitate to try it in other fantastic recipes. It pairs wonderfully with chicken, as seen in my Sweet Potato Pesto Chicken Skillet, or as a vibrant dressing for a light salad, like the Pesto Shrimp Tomato Salad Recipe. The possibilities are truly endless!

Ingredients
For the Sun-Dried Tomato Pesto
- 3 garlic cloves
- 1 cup fresh basil leaves
- 1 cup sun-dried tomatoes (packed in olive oil, drained)
- 2 tablespoons olive oil (use oil from sun-dried tomatoes for extra flavor)
- ½ cup grated Parmesan cheese
For the Sausage
- 1 teaspoon olive oil
- 4 small fresh Italian sausages, sliced
For the Pasta
- 2 packages nuPasta Angel Hair (or your preferred nuPasta shape)
- 2 tablespoons shredded Parmesan cheese, for garnish
- 1 teaspoon fresh parsley, chopped, for garnish
Instructions
- In a food processor, combine all the ingredients for the sun-dried tomato pesto. Process on low speed for 1 to 2 minutes, or until smooth. Set aside.
- Heat 1 teaspoon of olive oil in a large skillet over medium heat. Add the sliced Italian sausages and sauté until they are fully cooked through and browned.
- While the sausage cooks, drain and rinse the nuPasta Angel Hair with cold water for about 10 seconds.
- Add the rinsed nuPasta and 6 tablespoons of the prepared sun-dried tomato pesto to the skillet with the cooked sausages. Stir everything together thoroughly to combine, ensuring the pasta and sausage are well coated.
- Continue to heat for about 1 minute, allowing the pasta to warm and absorb the flavors.
- Before serving, transfer the pasta to plates and top generously with additional shredded Parmesan cheese and fresh chopped parsley for a vibrant finish.
Notes
- For the best melting and flavor, I highly recommend using freshly grated Parmesan cheese over pre-grated varieties.
- If you enjoy a bit of heat, opt for spicy Italian sausage to give your pasta an extra kick.
- To store: Any leftover pasta can be stored in an airtight container in the refrigerator for up to 3 to 4 days.
- To reheat: Reheat leftovers easily in the microwave or on the stovetop over low heat until warmed through.
- To freeze: This dish freezes well! Place cooled leftovers in a freezer-safe container or bag and store for up to 3 months. Thaw overnight in the refrigerator before reheating.
