How to Master Sweet Potato Burritos: A Step-by-Step Guide
Creating these flavorful sweet potato burritos is simpler than you might imagine. The following detailed tips will help you achieve perfect results every time, ensuring your burritos are packed with tender potatoes and perfectly seasoned beans. You will find the precise ingredient quantities and comprehensive instructions conveniently laid out in the recipe card at the bottom of this post.
Preparing the Flavorful Filling
- Sauté the Aromatics and Sweet Potatoes: Begin by heating a tablespoon of your preferred oil, such as extra virgin olive oil, in a large skillet over medium heat. Once the oil shimmers, add the cubed sweet potatoes, finely diced onion, and the robust taco seasoning. Stir to ensure the sweet potatoes and onions are evenly coated with the seasoning.
- Cook Until Tender and Slightly Crispy: Continue to sauté the mixture, turning it frequently to prevent sticking and ensure even cooking. The goal is for the sweet potatoes to become fork-tender with a slight caramelization on the edges. This process typically takes about 20 minutes, allowing the flavors to meld beautifully and the potatoes to develop a desirable texture.
- Incorporate the Black Beans: Once your sweet potatoes have reached perfect tenderness, add the rinsed and drained black beans to the skillet. Cook for an additional 2-3 minutes, just long enough for the black beans to heat through and absorb some of the delicious seasoning.
- Add a Bright Citrus Finish: Remove the skillet from the heat. To awaken the flavors and add a refreshing zing, stir in both the zest and the freshly squeezed juice of a medium lime. The citrus brightens the earthy notes of the beans and potatoes, adding a crucial layer of flavor.

Assembling and Wrapping Your Burritos
- Warm Your Tortillas: For burritos that are easy to roll and taste even better, lightly toast each tortilla in a dry skillet over medium heat or warm them briefly in the microwave. This step makes them soft and pliable, preventing tears during wrapping.
- Fill with Generosity: Place about ⅓ to ½ cup of the prepared sweet potato black bean mixture onto the center of each warmed tortilla. This amount provides a hearty filling without making the burrito too difficult to wrap. If you happen to have any leftover filling, don’t let it go to waste! It’s fantastic topped with a poached egg for a quick and healthy breakfast.
- Add Your Favorite Toppings: Customize your burrito by adding desired toppings. Shredded cheese melts beautifully into the warm filling, while mashed avocado or guacamole adds a creamy, rich texture and extra healthy fats. Salsa, sour cream, or a dash of hot sauce can also enhance the experience.
- Master the Wrap: To seal your burrito effectively, first fold up the bottom edge of the tortilla over the filling. Next, fold in the sides, creating neat flaps. Finally, roll the burrito tightly from the bottom upwards to create a secure, portable package. Serve immediately and enjoy the fruits of your labor!

Meal Prep Made Easy: Storage and Freezing Your Burritos
These sweet potato burritos are an exceptional choice for meal prepping, allowing you to enjoy healthy, delicious meals throughout the week with minimal effort. Their robust ingredients hold up wonderfully to storage, making them a staple for busy individuals and families.
Refrigeration and Freezing Instructions
To store your burritos in the refrigerator, allow them to cool completely after assembly. Then, place them in an airtight container. They will remain fresh and flavorful for 5-6 days, ready for a quick grab-and-go meal.
For longer storage, these burritos freeze beautifully. To freeze sweet potato burritos, simply follow the recipe as stated, assemble, and allow them to cool. Once cooled, wrap each individual burrito tightly in aluminum foil or plastic wrap. This protective layer helps prevent freezer burn and preserves freshness. Place the wrapped burritos into a freezer-safe bag or container, removing as much air as possible, and freeze for up to 3 months.
When you’re ready to enjoy a frozen burrito, transfer it from the freezer to the refrigerator to defrost overnight. Once thawed, you can easily pack it with an ice pack for a convenient and healthy school or work lunch. To reheat, remove the foil (if applicable) and warm in the microwave for 1-2 minutes, or in a preheated oven at 350°F (175°C) for about 15-20 minutes, until thoroughly heated. The ability to prepare these in advance makes them an invaluable asset for maintaining a healthy eating routine.
Customization and Serving Suggestions
One of the best aspects of these sweet potato burritos is their adaptability. While the core recipe is fantastic on its own, don’t hesitate to get creative with additional ingredients and serving styles to suit your palate.
Enhance Your Burrito Filling
Consider adding extra vegetables like corn kernels, diced bell peppers, or even a handful of fresh spinach for added nutrients and texture. A sprinkle of crumbled feta or cotija cheese inside the burrito can add a salty tang. For those who enjoy a spicier kick, a pinch of cayenne pepper or a dash of chipotle powder mixed into the taco seasoning can elevate the heat level. You could also swap out black beans for pinto beans or incorporate a mix of both. For a heartier meal, consider adding cooked quinoa or rice to the filling mixture.
Perfect Pairings and Toppings
Beyond the classic avocado or guacamole, these burritos pair wonderfully with various toppings. A dollop of Greek yogurt or sour cream offers a cooling contrast to the spices. Fresh salsa, whether homemade pico de gallo or a store-bought variety, adds brightness and moisture. For an extra layer of flavor and crunch, try adding thinly sliced radishes or chopped fresh cilantro. Serve alongside a simple green salad for a complete and balanced meal, or with a side of tortilla chips and extra salsa for a more indulgent experience.

- ¼ cup minced yellow onion
- 1 (15 oz can) black beans, rinsed and drained
- 1 tablespoon taco seasoning
- 1 medium lime, zested and juiced
- 8 (8-10 inch) tortillas
Instructions
-
In a medium skillet, heat 1 tablespoon extra virgin olive oil over medium heat. Once the oil is glistening, add 4 cups cubed sweet potatoes, ¼ cup minced yellow onion, and 1 tablespoon taco seasoning. Sauté until potatoes are tender, turning frequently. This should take about 20 minutes.
-
Once the sweet potatoes are fork-tender, add 1 (15 oz can) black beans (drained and rinsed) and cook for 2-3 minutes or until the beans are warmed through. Remove the skillet from the heat.
-
Zest 1 medium lime into the skillet. Then cut the lime open and squeeze the juice of the lime into the sweet potato mixture. Stir to combine.
-
Warm tortillas slightly in a dry skillet or in the microwave, until soft and pliable.
-
Place ½ cup of the sweet potato mixture in the center of the warmed tortilla. Top with cheese and/or avocado if desired. Wrap up each burrito, folding up the bottom, then the sides, then rolling to seal. Serve immediately or cool to store.
Notes
Beans: If using canned black beans, be sure to rinse and drain them before adding them to the skillet. And of course, feel free to substitute pinto beans for the black beans if desired.
Taco Seasoning: For a homemade option, use ½ tablespoon chili powder, ½ teaspoon cumin, ½ teaspoon salt, ½ teaspoon paprika, ¼ teaspoon onion powder, ¼ teaspoon garlic powder, ⅛ teaspoon oregano and a pinch of crushed red pepper flakes.
Storage: Store in the refrigerator for 5-6 days in an airtight container. To freeze sweet potato burritos, follow the recipe as stated and wrap each burrito in foil or plastic wrap. Place in a freezer-safe bag or container and freeze for 3 months. Defrost overnight and then simply pack with an ice pack for school or work lunches.
